Enantio Terradeiforti DOC
The recovery of a history, of a native and ancient vine, told already by Plinio il Vecchio. He took us to believe in this wild variety. A wine always amazes us, the result of long research to find out the character and authenticity of this grape.

Harvesting method: manual picking with grape clusters selection
Vinification: the grapes are gently destemmed and pressed. The must obtained starts to alcoholic fermentation in steel containers at a controlled temperature between 23 and 25 ° C; simultaneously we proceed to a short maceration on the skins. The wine undergoes malolactic fermentation in French oak barrels, where it remains for about 15 months. The bottled wine is stored in thermo-conditioned premises for about five months.
Colour: bright thick ruby red
Scent: Complex bouquet of red berries, spices with a soft tobacco and incense notes. Enantio presents an excellent richness and complexity.
Food pairings: The ideal match with venison, game and strong and spicy cheeses.
